A historic restaurant in the Maremma Collinare, Ristorante dei Merli has been in the characteristic Piazzaetta del Pretorio in Sovana since the beginning of the 20th century. A traditional Maremman restaurant, it has always been dedicated to cooking only the best territorial fare. The family who started the restaurant, the Merli of Sovana, have always sourced their ingredients from the farms in the zone. When the restaurant opened it was the women of the family who prepared the daily dishes, the soups, pastas and roasts for the men, who, in this farming area, returned from the countryside expecting a delicious meal. With this rich heritage, decades of experience and a vast source of traditional recipes, Ristorante dei Merli today participates in the Slow Food at 0km project, which continues the restaurant’s obsession with using only locally sourced produce. For over a century, Ristorante dei Merli has been providing locals and tourists with the flavours of traditional Maremman dishes, cooked with a knowledge of the territory and made with the best local produce and fresh ingredients.
