Ristorante dei Merli’s chef Renzo Santarelli was not only born in the Maremma but actually hails from Sovana. Over the generations his family has built up a rich knowledge and experience of the traditional local gastronomy, which Renzo continues to use today. The gardens filled with local Maremman herbs continue to inspire our cuisine, which is dedicated to maintaining the fragrances and genuine essences of the traditional recipes. At Ristorante dei Merli in Sovana our chef and his team choose only local products, using them to create dishes that are not only traditional but also work to bring out the best of these products. Particular attention is paid to the ‘fats’ that were once used in traditional dishes and are today used in a balanced and health conscious way. |
